Technically, you are purchasing a licence to access the book that Google can revoke at any time. But most likely you will be able to keep the book as long as you download a copy to an offline device, and/or still have access to your Google Store account.

How long do the licenses last if I buy a book?

They will be around as long as the Google Play store is active. However, the licences will end if Google loses the right to distribute the book or removes it for some other reason (such as illegal content they only found after adding the book to the store).
