  • Question
How many days before cooking can you buy the roast?
    Community Answer
Up to seven days as long as your fridge is 45 degrees or less. Fine steak houses "age" their beef by leaving it in their walk-in refrigerators for longer than that. Make sure it is covered well so it does not absorb other food smells.
  • Question
How long can I leave it in the fridge before cooking?
    Community Answer
As long as the temp stays at 45 degrees or less and it's defrosted, it will keep up to seven days under perfect conditions.
  • Question
Can I use cotton string to tie up the rib? Or butcher string?
    Community Answer
You shouldn’t have to use string to tie up your rib roast unless the bones have already been cut off, and if that’s the case, get a different roast, as it’s already been ruined.
  • Question
Can I freeze a standing rib roast if I find one on super sale and the party is 3 weeks out?
    Community Answer
Yes, you can! If the market where you bought it can't wrap it for freezing, leave the roast in the wrap it was purchased in, and wrap it again, either with butcher's paper or a second layer of plastic wrap. Try to get as much air out as possible, freeze until a couple of days before the party, then thaw it in the refrigerator.
