    After draining the oil, put another pot under the deep fryer to catch the cleaning water. Then, get a hose and shoot water to remove all the debris in the fryer. Keep going until the water runs clear and the fryer is clean, emptying the pot as needed.

    You may want to turn the temperature down if you're not watching the fryer, but if you are exceptionally busy you can leave it on at a high temperature. Make sure all safety protocols are being followed.

    The white foam should go in first, and then the black charcoal filter on top. The foam filter will take most of the grease leaving little to cling to the charcoal filter. Some foam filters can be washed and re-used, but the charcoal filter cannot be re-used. However, keep the charcoal filter in order to create a template of the filter size for cutting out new filters when you buy them as they tend to come in larger sheets.

    You can reuse oil. However, if there are floating bits of food you may have to empty the oil. If the oil is a dark brown color, it should be emptied.
