    It's been proven by Chef Alton Brown and others that mushrooms do not soak up water like a sponge. Rinsing or briefly soaking is a great way to clean them. What is your take on this?

    It depends on how well you trust your mushroom cultivators. A friend of mine grows both the Portobello and oyster mushrooms, and he prefers to use compressed air to airbrush them clean. This way, you don't mess around with any water. These are exceptionally clean mushrooms.

    Yes. There no need to remove the skin of mushroom, which is not only safe to eat, but also a great source of protein and carbohydrates with a very low amount of fat. If you want to clean it, just put in hot water for about 15 minutes.

    Mushroom gills are totally edible, but in some cases, they make a dish unsightly. Most recipes that call for mushrooms don't require that you remove the gills on the underside of the caps. Portobello mushrooms, however, have particularly dark gills, which can cause any dish they're used in to turn dark and unappealing.

    They can but don’t worry, as that is perfectly normal. You can continue to eat them just when you put them away make sure there is no extra air in the container.
