Alduin will level with you, so judge based on your gear, spells, ect. If you have decent gear and weapons/spells, just take a bunch of healing potions and you should be okay.

If you have used Dragonrend (he will have a light blue aura when this effect is present) and he is still immortal, this may be a bug. Unfortunately, you'll have to load a save file before the fight in order to fix this. Don't use Dragonrend before Paarthurnax first tells you to, as this may cause this bug.

First, play the game when nobody else is nearby and that should help some. Then take into consideration that you can save at any time and take breaks; maybe not during the actual fight but don't worry, you can do this as many times as you want. Remember that it is just for fun; in fact, it can be relieving to insult the dragon: "hey world eater, you lost your appetite?!" and "oh come on, that hit was nothing!". And my favorite after I use dragon rend: "oh how does it feel to be mortal?". Plus, healing is one of the default spells you get at the beginning, so hide and let the other dragonborns help you and take the damage while you hide and heal.
