There are a number of reputable companies that offer prototyping services that have a variety of resources(i.e. Additive Manufacturing, Subtractive Manufacturing, Metal fabrication, etc.) that will be able to guide you through the process, and be familiar with NDA's and already have systems in place to protect your intellectual property. Just remember that your patent is only as good as the lawyer you can hire to litigate on your behalf.
