Why can't I place a pressure plate right beside an iron door in Minecraft?

It is because doors occupy the same space as two blocks, one above and other below. So you can't place one right beside.

Gold pressure plates don't work because every different material pressure plate sends a different amount of redstone signal. Use other pressure plates instead.

How can I make a door that won't open even if I have a button next to the door?

You can either have a mod, or, you could put the door facing a different direction, either to the left or right, and two blocks below put a redstone torch, then the button won't work.
