    It works best with instant coffee. If you use another kind, brew it as normal, and then use it in place of the hot water. For method 2 with cream and hot milk, use it in place of the hot milk and just whip the cream and sugar together.

    No, but you do need to use some kind of granulated sweetener. The granules (of sugar or Swerve or whatever have you) are what make the foam by aerating the mixture - the instant coffee dissolves too quickly to create this effect.
