If you have a New Nintendo 3DS, you can softmod it and install NTRViewer -- that way you'll be able to stream gameplay to your PC. If you have an old 3DS, you cannot use NTRViewer because the console is too weak to handle that. Buy a 3DS capture card.

What video editing apps can I use to record gameplay off an older game console such as the GameBoy Advance, Nintendo 64, The PlayStation 2 and 3, with my smartphone?

If you're using iOS, you can use iMovie. It has professional features that can be used with a basic UI. There are more video editing software on Android, but the best one in my opinion is Adobe Premiere Clip. It isn't as great as iMovie, but it gets the job done.

How do I do it on a Switch?

You could use the 4th method, using a phone or camcorder. Follow the instructions to re-route the audio, and use a tripod (if you have one) to record your TV screen. If you aren't recording your TV and are trying to record directly on the Switch screen, place the camera somewhere in between your arms and try to keep your hands out of the recording. You can also crop the footage later to make it look better.

You will need a capture card to record gameplay, as the Xbox 360 doesn't have a recording function. I would personally recommend the Elgato capture card, as the software is easy to use and it integrates with XSplit and OBS. If you're on a budget, you can get an AverMedia capture card (the software is a bit harder to use).
