You don't. That's the point. You could conceivably take a picture of your screen with another device, but that defeats the purpose of Snapchat, and is kind of underhanded.

Can I set Snapchat up to immediately unfriend someone when they read a message?

No but you can tap on their name or bitmoji and it will take you to their snap profile then push the 3 dots in the upper right hand corner and it will give you the options like message, report, block and so on.
