It can be difficult to tell when corned beef is done, because it takes on a pink color when pickling salt is used. The best ways to tell if corned beef is cooked are to time the cooking appropriately and to test the beef with a meat thermometer.

    You really don't want to depend on any protein being cooked properly (for both safety and taste), by anything other than the temperature of the meat being between 145-160ºF. A good digital meat thermometer is pretty inexpensive and one of the most important tools to have in your kitchen! This makes it so much easier to determine the meat is cooked to a safe temperature, and to avoid over-cooking.
