Mexican Spice Hot Cocoa
Ingredients:
½ cup sugar
¼ cup cocoa powder
Pinch of salt
⅓ cup hot water
2 cups milk
½ tsp. vanilla
¼ tsp. cinnamon
¼ tsp. ground chipotle
Instructions:
Combine sugar, cocoa, and salt in saucepan. Add water and heat to a boil, then cook, stirring, for 1-2 minutes. Stir in milk and heat to serving temperature (do not boil). Remove from heat, then stir in vanilla, cinnamon, and ground chipotle. Whisk until frothy. Makes about 4 servings.
Hot Buttered Cider
Ingredients:
8 cups apple cider
2 tbsp. brown sugar
4 sticks cinnamon
1 tsp. allspice
1 tsp. whole cloves
1 lemon peel, cut into strips
2 tbsp. butter
Instructions:
Combine apple cider and brown sugar in a large pot. Add spices and lemon peel, contained in a cheesecloth, to pot. Bring to a boil, then reduce to a simmer and cover for 15 minutes. Add ½ tsp. butter to each mug or glass. Makes about 10-12 servings.
London Fog Earl Grey Latte
Ingredients:
1 bag Earl Grey tea (or enough loose tea leaves for 1 cup of tea)
½ cup milk, almond milk, or coconut milk
½ tsp. vanilla
1 tsp. sugar (optional)
Instructions:
Boil your water then steep your cup of tea for five minutes. Remove the tea bag or the tea leaves. While your tea is steeping, pour your milk into a saucepan and cook over medium heat, whisking for about five minutes, until it is frothy. Add the milk to the tea. Finally, swirl in your vanilla and sugar, if using. Makes 1 serving.
