Chicken noodle soup: Simmer chunks of chicken in chicken broth, add some veggies like carrots and peas, and then add chunky noodles and cook until the veggies and noodles are soft.
Miso soup: Simmer 1 sheet of nori in 4 cups water for 5-7 minutes. Add hot water to 3-4 Tbsp. miso paste and whisk to combine. Add ½ cup chopped green chard, ½ cup chopped green onion, and ¼ cup cubed tofu to the pot of water and cook for 5 minutes. Remove from heat, add miso, then stir to combine.
Vegetarian pho: Cook 14 oz. rice noodles according to package directions. In a large pot, combine 8 cups veggie broth, 6 chopped green onions, 1 Tbsp. grated ginger, and a pinch of salt. Bring to a boil, reduce heat, and simmer for 15 minutes. Meanwhile, melt 1½ Tbsp. butter in a medium saucepan. Add 6 oz. shiitake mushrooms, stems removed; saute for about 6 minutes, or until tender. Add 1½ Tbsp. hoisin sauce and 2 tsp. sesame oil. Cook until sauce thickens and coats mushrooms, about 1 minute. Divide the noodles between 6 bowls, then fill with ginger broth. Top with the mushrooms, bean sprouts, sliced jalapeños, fresh basil, and cilantro. Serve with lime wedges, hoisin, and chili garlic sauce.
Ramen: Follow package instructions to cook 1 package of ramen. Eat plain, or add your favorite toppings such as cooked chicken or shrimp, a hard boiled egg, chopped tomatoes and peppers, or crumbled nori.
Chicken and wild rice soup: Melt 4 Tbsp. butter in a large saucepan. Add 3 ribs of chopped celery, 2 chopped carrots, 1 chopped onion, 2 minced garlic cloves, and 1½ tsp. chopped thyme. Season with salt and pepper. Cook over medium heat until veggies start to soften, about 10 minutes. Sprinkle on ¼ cup flour and continue cooking for about 3 more minutes. Add 1 cup wild rice, 2 quarts chicken stock, and 2 cups water to the saucepan. Bring to a boil, then reduce heat and cook, stirring occasionally, for about 30 minutes. Add 4 cups chunked roasted chicken and continue cooking for about 10-15 minutes, or until rice is tender. Stir in 1 cup heavy cream, then season with salt and pepper.
