Parboil Potato Veggie Stir Fry Recipe
Ingredients:
* 4-6 medium-sized potatoes, peeled and cut into chunks
* 2 tablespoons vegetable oil
* 1 onion, sliced
* 1 red bell pepper, sliced
* 2 cups sliced mushrooms
* 2 cups chopped broccoli
* 3 cloves garlic, minced
* 1 tablespoon soy sauce
* Salt and pepper, to taste
* Optional: sesame seeds or chopped green onions for garnish
Instructions:
Parboil the potatoes: Place the potato chunks in a pot of salted boiling water and cook for 5-7 minutes, or until they are partially cooked but still firm.
Drain the potatoes and set them aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the sliced onion and stir-fry for 1-2 minutes until it becomes slightly translucent.
Add the red bell pepper, mushrooms, and broccoli, and stir-fry for 2-3 minutes until the vegetables start to soften.
Add the minced garlic and stir-fry for an additional 1-2 minutes until fragrant.
Add the parboiled potatoes to the skillet and continue to stir-fry for 5-7 minutes, or until the potatoes are fully cooked and the vegetables are tender.
Season with soy sauce, salt, and pepper to taste.
Garnish with sesame seeds or chopped green onions if desired.
