Chicken Brine Recipe
Ingredients:
* 4 bone-in chicken breasts or 8 bone-in chicken thighs
* 1/2 cup kosher salt
* 1/2 cup granulated sugar
* 2 quarts cold water
* 2 bay leaves
* 1 tablespoon black peppercorns
* 1 tablespoon dried thyme
* 1 tablespoon dried rosemary
* 1 tablespoon garlic powder
* 1 tablespoon onion powder
Instructions:
In a large pot, combine the salt, sugar, water, bay leaves, peppercorns, thyme, rosemary, garlic powder, and onion powder.
Heat the pot over medium heat, stirring until the salt and sugar have dissolved.
Remove the pot from the heat and let the brine cool to room temperature.
Place the chicken in a large resealable plastic bag or a large glass dish.
Pour the brine over the chicken, making sure it is completely submerged.
Refrigerate the chicken for at least 2 hours or up to 24 hours.
Preheat your oven to 400°F (200°C).
Remove the chicken from the brine and pat it dry with paper towels.
Place the chicken on a baking sheet lined with parchment paper or in a baking dish.
Bake the chicken for 30-40 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the oven and let it rest for 5-10 minutes before serving.
