Smoked Gammon Recipe
Ingredients:
* Smoked gammon joint (1.5-2kg)
* Onion (1 large, peeled and halved)
* Carrots (2, peeled and chopped)
* Celery stalks (2, chopped)
* Garlic cloves (2, peeled and halved)
* Bay leaves (2)
* Whole peppercorns (1 teaspoon)
* Brown sugar (2 tablespoons)
* Mustard (1 tablespoon)
* Honey (1 tablespoon)
* Apple cider vinegar (1 tablespoon)
* Water
Recipe for Smoked Gammon:
Preheat the oven to 170°C (325°F) fan.
Place the smoked gammon joint (1.5-2kg) in a large pot or Dutch oven and cover with cold water. Add the onion (1 large, peeled and halved), carrots (2, peeled and chopped), celery stalks (2, chopped), garlic cloves (2, peeled and halved), bay leaves (2), and whole peppercorns (1 teaspoon).
Bring the water to a boil, then reduce the heat to low and let the gammon simmer for 1 hour.
Remove the gammon from the pot and place it on a baking tray lined with foil.
Use a sharp knife to score the skin in a diamond pattern, then stud the gammon with cloves (optional).
In a bowl, mix together the brown sugar (2 tablespoons), mustard (1 tablespoon), honey (1 tablespoon), and apple cider vinegar (1 tablespoon) to make a glaze.
Brush the glaze over the scored skin of the gammon.
Bake the gammon in the preheated oven for 45 minutes, basting it with the glaze every 15 minutes, until the skin is crispy and caramelized.
Remove the gammon from the oven and let it rest for 10-15 minutes before slicing.
Serve hot with your choice of sides and enjoy your delicious Smoked Gammon!
Note: You can also boil the gammon joint in a slow cooker on low for 6-8 hours.
