Oven Baked Pinto Beans Recipe
Ingredients:
* 1 pound dried pinto beans
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 can (14 oz) diced tomatoes, drained
* 1/4 cup ketchup
* 1/4 cup brown sugar
* 2 tbsp mustard
* 1 tsp salt
* 1/2 tsp black pepper
* 5 cups water
Instructions:
Rinse the dried pinto beans under cold running water and remove any debris or shriveled beans.
In a large pot, add the rinsed beans and enough water to cover them by about 2 inches.
Bring the pot to a boil and then reduce the heat to low. Simmer the beans for 45 minutes to an hour or until they're partially cooked.
Preheat the oven to 350°F (175°C).
Drain the partially cooked beans and transfer them to a large baking dish.
Add the chopped onion, minced garlic, drained diced tomatoes, ketchup, brown sugar, mustard, salt, and black pepper to the baking dish.
Pour 5 cups of water over the ingredients in the baking dish and stir to combine.
Cover the baking dish with aluminum foil and bake for 2-2 1/2 hours or until the beans are fully cooked and tender.
Remove the foil from the baking dish and bake for an additional 10-15 minutes until the top is slightly browned and the liquid has thickened.
Serve the oven-baked pinto beans hot as a side dish or use them in your favorite recipes.
