Lobster Tail Salad
Ingredients:
* 2 lobster tails, boiled and meat removed from the shells
* 4 cups mixed salad greens
* 1/4 cup cherry tomatoes, halved
* 1/4 cup sliced cucumber
* 1/4 cup sliced red onion
* 1/4 cup crumbled feta cheese
* 2 tbsp olive oil
* 2 tbsp red wine vinegar
* Salt and pepper to taste
Instructions:
Divide the salad greens between two plates.
Top the salad greens with the cherry tomatoes, cucumber, red onion, and feta cheese.
Cut the lobster meat into bite-sized pieces and divide it between the two plates.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
Drizzle the dressing over the salads and serve immediately.
