Roasted Parboil Sweet Potatoes Recipe
Ingredients:
* 4-6 medium-sized sweet potatoes, peeled and cut into chunks
* 2 tablespoons olive oil
* 1 tablespoon honey
* 1/2 teaspoon ground cinnamon
* Salt and pepper, to taste
Instructions:
Preheat your oven to 425°F (220°C).
Parboil the sweet potatoes: Place the sweet potato chunks in a pot of salted boiling water and cook for 5-7 minutes, or until they are partially cooked but still firm.
Drain the sweet potatoes and pat them dry with a paper towel.
In a bowl, mix together the olive oil, honey, cinnamon, salt, and pepper.
Add the parboiled sweet potatoes to the bowl and toss until they are evenly coated with the mixture.
Spread the sweet potatoes out in a single layer on a baking sheet.
Roast the sweet potatoes in the preheated oven for 20-30 minutes, or until they are caramelized and tender.
Remove from the oven and serve immediately.
