    It could be because most fridges are equipped to remove humidity from the air. The reason for this is to prevent mold from growing in the fridge. In order to protect your celery from wilting, it should be stored in an airtight container. If it's airtight, it can't be dehumidified. If it's already wilted, just put it in some water, and it will be good as new.

    It can still be used in dip and pureed food; it's usually not much good for anything else once frozen and limp but you'll still get the flavor in a soup or dip.
