  1. If your broiler pan has sides that allow it to hold water, set it on your counter and fill it with water. If the broiler pan has slats or is flat with no edges, put it to soak in the sink or a plastic tub or a basin that’s large enough to hold it.       • Every pan is different in terms of how bad the caked on food residue is. Adapt the process for pans that are extra dirty. Leave them to soak longer or repeat the process twice when necessary.
      • Be careful about using a metal spatula to scrape off the baking soda, as it may scratch enamel of the pan. If you have a stiff plastic (nylon) scraper, that should work just as well.
        • A pumice stone can be of great help if you have a black or gray broiler pan. Do not use it on a blue broiler pan, since it can eat the pan coating.
