Clearly, it's a boss battle, so that's why it is hard to beat him. But, practice makes perfect! Try practicing with Bad Time Sim, or something that can build up your skills so it's easy to beat him.

    Since he's one of the hardest characters to beat in the game, it takes a lot of time to just hit him once. They did not want to make the game too hard, so they made him 1 HP. It takes up to an hour to beat him for some, and up to 10 minutes for others.

    The two routes are definitely not the same. The Soulless Pacifist route can only be activated if you play a Genocide route and then a Pacifist route. The Post Genocide is just the end of a regular Genocide route.

    The Stained Apron cannot be obtained during a Genocide Route (AKA the route where you fight Sans), and you are exactly right, defense does not matter at all. But one thing you can equip for protection is the Burnt Pan, for using consumables with it equipped heals an extra 4 HP.

    Since only 1 hit by any weapon will take him out, the strength doesn't really matter, but I would suggest the Burnt Pan, because whenever you eat food with it equipped you gain an extra 4 HP. Armor doesn't matter at all, for all of his attacks do the exact same amount of damage. In fact, if you still have it on, just use the bandage for comedic effect.
