QuestionCan I just cut off the old end and knot on a new piece of the new color?Community AnswerWhen you start with the new color, you should leave a longer end of both the old and new colors. Theoretically, the best way to get rid of these ends (once your work is finished) is to sew them into the finished work using a tapestry or sewing needle. Some people like to tie the ends together before they do this, but the knot may be visible from the side. If you don't care about being able to see the knot, you can definitely do this, but I still strongly recommend that you sew in the loose ends to prevent your work from unraveling.

That is, carry the white along the back of the red when working the cable, and the red behind the white. This will leave a distinct back to your project and not reversible at all.
