If I send a message and it says delivered, and then, moments later it says read, does that mean it was actually read or is it just a confirmation that it was delivered?

How do I change a text message that I've read to unread on my Samsung Galaxy?

There isn't an option to unread a read message, but to disable the function in general, go to the Messaging App. Press the three dots in the top right corner. Click Settings > Advanced Messaging > Toggle the "Share read status" setting from right to left, which turns it off. This should disable the "read" status. If there is a need to turn it back on, simply toggle the same setting to the right.

How do I tell if someone read my text messages on my Samsung Galaxy?

If both of you are using Android Messages and have Chat Features turned on, you should be able to see if it's marked as read, and when they're replying. If both of you use the default Samsung Messaging App, and you're on the same carrier, and have your carriers "Chat Feautures" or "Advanced Messages" turned on, you will be able to see if read, and when replying. If not on the same carrier (until intra-carrier RCS is rolled out) it won't work through the Samsung app.
