Would anybody be interested in a math project that aims to improve math articles?

I’d say the project should be more specific - what do you mean by improving math articles? Without a clear idea of what “improve math articles” means, it’s difficult to tell if the project is actually doing anything.

Can you define math articles?

Would it be geared more towards Algebra and Trig, or would it be towards another subject? Also, if it were started, could you improve some of them so they fit the LaTeX standards mentioned here ? There are so many angles a Math Project could go towards.

I could definitely be interested but i need some more clarification what exactly do you mean by improvise mathematical items.
