    The same way you would with flat knitting. It's best to change between two needles, or best of all, at the end of a round. Make sure the end is on the outside, so you can easily find it later when you have to sew it in.

    Sewing the edges together with a ladder stitch is one method. Use a crochet hook to make a chain stitch pattern through both pieces and make it part of the design. Overlap the edges and crochet the edges together. You can make it close together of loose and lacy. Knit a joining strip by picking up and knitting through a stitch from each piece.

    Can I just cut off the old end and knot on a new piece of the new color?

    When you start with the new color, you should leave a longer end of both the old and new colors. Theoretically, the best way to get rid of these ends (once your work is finished) is to sew them into the finished work using a tapestry or sewing needle. Some people like to tie the ends together before they do this, but the knot may be visible from the side. If you don't care about being able to see the knot, you can definitely do this, but I still strongly recommend that you sew in the loose ends to prevent your work from unraveling.

    You can do a stranded knit. That is, carry the white along the back of the red when working the cable, and the red behind the white. This will leave a distinct back to your project and not reversible at all. See How to Hold Yarn when Stranded Knitting for an idea on how this is done.
