    Leaving your bacon in the fridge can make it tougher. All in all, bacon is a meat and meat is tough. The darker parts, which are the muscle or meaty parts, are tougher than the white/light parts, which is the fat. You can look for a less lean bacon (one with more white than pink) next time you buy bacon. Be sure not to overcook it.
