    Expert Answer
Refrigerating your fried rice will drive out some of the moisture inside the rice grains. Leave it in for about an hour, then take the dish out and warm it up just before serving. Doing this keeps your dish from turning into a mushy mess and gives it the perfect texture!
  • Question
How many people does this recipe serve?
    Community Answer
    2 - 3 people.
  • Question
When I added soy sauce to my rice, it became darker. Did I add too much?
    Community Answer
Soy sauce, or any other type of seasoning sauce that you add, will add some color to the rice. However, if your rice becomes very dark after you mix in the sauce, it may be a sign that you added too much. Start with a small amount, such as 2 tablespoons, and taste the rice to see if it's enough. Only add more if necessary.
  • Question
Can I just fry the rice and egg without any vegetables?
    Community Answer
Yes, but I suggest you cut the vegetables larger so you can pick them out; they add great flavor to the rice.
  • Question
If I don't have sesame oil, what can I use instead?
    Community Answer
While sesame oil gives the rice a unique flavor, canola or grapeseed oils will also work well. If you don't have either of those, peanut or generic vegetable oil both work okay as well.
  • Question
    Why is it brownish?
    Community Answer
It is supposed to be that color. It's brown because it is fried in oil.
  • Question
Can I fry the rice just as it is, then continuously add water to soften it while flavoring?
    Community Answer
If you fry the rice and add water every time it’s going to look more like rice pudding but if you like rice pudding and that texture, than you should be fine.

In addition to the sesame oil and soy sauce, you can add a hot sauce like Tabasco to taste. You can also add hot peppers of your choice while stir-frying the vegetables. Just be sure to use care while handling the hot peppers.
  • Question
Do I have to wait an hour for it to dry?
    Community Answer
If you don't allow your rice to dry before frying it, it tends to turn a little mushy and won't absorb the flavors as well.
  • Question
Would soy sauce be an essential ingredient to fried rice when making it homemade?
    Community Answer
You could omit it, but soy sauce is what gives the rice the classic Chinese taste.
