Since words in Chinese are written as single characters, there's no such thing as a "longest" word. Instead, you would look at the complexity of strokes required to make a single character. The most complex Chinese character is the one for "biángbiáng miàn," or "bianbiang noodles," which is between 52 and 57 strokes, depending on the version of the character. Since the character hasn't been encoded into Unicode, there's no way to enter it in a standardized form on a computer.
