    Look for asparagus that is firm to the touch, straight, and not bendable. If you try bending the asparagus, it should be brittle and crack. If it’s straight, that's great, but it depends on the way it grows. Also, you should get rid of the bottom part.

    I'd cook the asparagus in batches of 10 - 12 spears rather than trying to do all 50 at once. You can keep the cooked asparagus warm in a oven on a low heat or food warmer.
