~New year, new weight loss journey~ I am looking for some fun, new, healthy, but EASY meal prep ideas for a girl who works long hours and frankly does not enjoy cooking very much. I love chicken so feel free to recommend but I have been eating a lot of it lately so would love recs for other proteins. Otherwise, I am open to any flavors, any foods. Thank you!!!!

My go-to easy, cheap, healthy meal prep ideas:

For breakfast, I usually do overnight oats or chia pudding and almond milk and add whatever fixings my heart desires (usually honey, fruit, and nuts but you can also do chocolate chips, coconut, vanilla, etc.)

For lunch, I typically make an "adult lunchable": some type of raw veggie (usually chopped cucumbers/carrots/bell pepper), hummus, cheese cubes, pretzels.

And for dinner, my favorite healthy meal prep recipe is soup: you can make a hearty vegetable minestrone, turkey chilli, or other delicious, filling, low-carb recipes.

Tofu is an underrated protein! There are so many flavorful Chinese dishes that feature tofu. I love tofu soups and stir fries. I also have a sweet tooth and it feels illegal to be able to blend up tofu with honey and fruits or cocoa powder to make a sweet, healthy treat!

Haha I feel like I'm getting tired of chicken too! I used to have chicken breast for all of my protein so recently I've been trying to switch it up.

I've been obsessed with turkey chili! The turkey is lean so it has a lot of protein without a ton of fat, and it's packed with healthy ingredients like bell peppers, tomatoes, onion, and garlic. I like to top mine with avocado too. I'm in love with turkey chili because it's healthy and delicious!

I've also been eating soo much teriyaki salmon! I use a low-sodium soy sauce and honey to create the teriyaki glaze, grill up the salmon, and eat it with rice and veggies and it's so simple and easy but so yummy!
