  • Question
I used a spring pan from Walmart. The bottom plate has a slight rim. How can I lift the pie/cake without it falling apart?
    Community Answer
Most spring form pans have a bottom plate with a rim. The bottom plate rim or "lip" can be used upside down. Put a couple of pencils under it to elevate it, then place the ring around it and snap it shut. The pencils are needed to elevate the bottom plate enough so it will snap into place and be able to catch the groove in the ring providing a seal. I have also done this with parchment paper to cover the bottom plate, providing even easier removal of the cheesecake.
  • Question
Can I use a cake board with parchment paper on top?
    Community Answer
Some chefs like to use a cardboard cutout to lend the cake a little more support. Cut out a piece of cardboard the same size as the base of the springform pan. Press a piece of parchment paper over the cardboard.
  • Question
Is it possible to make this without a crust? I would really like to have no crust on my cheesecake.

You can actually make a cheesecake without a crust. Just put parchment paper on the bottom of your springform pan. To do this, you can cut out a circle slightly larger than the base of your pan and then bake as usual.
  • Question
Can I use a cardboard base and still bake it in the oven?
    Community Answer
If you mean just ordinary cardboard, no as the cake will stick to it and you will not be able to get it off.
  • Question
What board do I use when baking cheesecake? Where can I get one?
    Community Answer
You can use a cake-board from Michael's or another local craft store. Cake boards typically come shaped as circles, rectangles, or square.
