    Over-Dehydrating is not really possible. You are simply sucking the moisture out of the fruit, to preserve and enjoy the fruit in a different way. I don't recommend using your oven like the article suggests; a real dehydrator will work perfectly. Under-dehydrating is a problem, though; make sure you let them dry thoroughly, else your final result will end up with the wrong texture (and end up rotting quickly).

    No. Since you are removing excess moisture that will be removed anyway during the dehydration process, you are simply speeding things up.
