You'll just need to use the Vimeo button on the embedded video to go to its clip page, where you'll find the option to download the captions file. Click “vimeo” or “v” in the bottom right of the embedded video.
Click Download and select the captions file.
Look for .SRT or .WebVTT files — these are dedicated captions files.
