If you really want to build your own wedding bouquet, you need to think about flowers that can exist outside of water for many, many hours as your bouquet is not a centerpiece living on a table with water. You are carrying it around for photos and during the celebration. So you want to pick flowers that are tough, and that will last and not wilt, and you also maybe want to give yourself a dry run. So go to the grocery store, the flower market, definitely practice. Don't make your first bouquet ever on your wedding day. Do it ahead of time.
