Keep in mind that the size really only matters when you're making the initial cylinder. Once you have that initial circle completed, you just slowly shorten each additional row to create the cap.

Using the same yarn and needles, a child's hat needs about 100 stitches and for an adult ~120 stitches. Using the same pattern, with baby or sport weight 3 ply yarn will result in smaller hat. 4 ply or bulky yarn can increase the size by 2-3 inches if you do not change needle size.
