How would I show a three-day event as one entry across the three dates?

Tap or click on the end date and change it to the last day of the event. Do not check off the all day box. It will then show up as a three-day event.

How can I add an event using Google Assistant with no notifications?

At this time (2017) the Google Assistant is very limited on what it can do, which means that you cannot tell the Google Assistant to create an event without a notification. What you can do is tell the Google Assistant to create an event for you and then remove the notification in the Google Calendar app.

Whenever I add an event color to an event the reminder fails. Why is this happening?

Try rebooting your phone then trying again. If that doesn't work, just don't add event colors. If you deem event colors necessary, go see a tech specialist.

Open your Google Calendar on a web browser or mobile app. Click the "+" button at the bottom right to create a new event. In the event creation window, click on "Event color" below the event name to see all available icons and choose from various colors for your event.
