If you want redstone dust, then you mine it with a regular iron/diamond pickaxe. If you want redstone ore (the block itself), then you need an iron/diamond pickaxe enchanted with the Silk Touch enchantment. Just to clarify, you cannot use a wood, stone or gold pickaxe on redstone ore; you need an iron or diamond one.

A mob can have a chance to spawn because the mine may be dark. In the night it's dark and many mobs spawn. So, it's better to make torches and place them in the mine. Try mining stone, make a furnace, and then burn any logs (oak log, acacia log, spruce log, etc.) using a wooden item to make charcoal. That's just an extra thing to help you make torches if you don't find any coal.

You could use TNT when mining, but if redstone was in the blow up range of the TNT, the redstone will blow up with the TNT. So it isn't really a good way to mine any ore, expect for netherite.
